Vacations are designed for and around eating. Although, this means that now that we are back I\u00e2\u20ac\u2122m having to pay a little penance for my splurging. Meaning I\u00e2\u20ac\u2122m eating pretty much only \u00e2\u20ac\u0153green smoothies&#8221;, salads, and veggies this week. Somehow, miraculously, I actually didn\u00e2\u20ac\u2122t gain weight on our trip despite the wonderful food, so this is more a nutrition thing than a diet thing. I always like to say I\u00e2\u20ac\u2122m 85\/15. Healthy 85% of the time and indulging 15% of the time. This week is me just trying to even out the numbers. Or me trying to make myself feel better, one of the two.<\/p>\n<p>Anyway, Sunday afternoon was spent prepping meals for the week. I made 6 pints of smoothies for breakfasts and a bunch of salads for lunches. Knowing I would grow tired of leafy salad (I did not inherit my father\u00e2\u20ac\u2122s ability to eat the same thing every day) I threw together this bean salad on a whim. It turned out GREAT! And, AND, it got Matt\u00e2\u20ac\u2122s approval! I didn\u00e2\u20ac\u2122t expect that.<\/p>\n<p><a href=\"http:\/\/www.onlytwopeople.com\/blog\/wp-content\/uploads\/2012\/07\/IMAG0278.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone  wp-image-593\" title=\"IMAG0278\" src=\"http:\/\/www.onlytwopeople.com\/blog\/wp-content\/uploads\/2012\/07\/IMAG0278-577x1024.jpg\" alt=\"\" width=\"404\" height=\"717\" srcset=\"http:\/\/www.onlytwopeople.com\/blog\/wp-content\/uploads\/2012\/07\/IMAG0278-577x1024.jpg 577w, http:\/\/www.onlytwopeople.com\/blog\/wp-content\/uploads\/2012\/07\/IMAG0278-169x300.jpg 169w, http:\/\/www.onlytwopeople.com\/blog\/wp-content\/uploads\/2012\/07\/IMAG0278.jpg 1840w\" sizes=\"(max-width: 404px) 100vw, 404px\" \/><\/a><\/p>\n<p>Now here\u00e2\u20ac\u2122s the problem, when I cook, especially when I am throwing something together, I don\u00e2\u20ac\u2122t measure. So these are my closest approximations:<\/p>\n<p>Bean Salad<\/p>\n<p>1 15oz can <strong><em>Garbanzo Beans<\/em><\/strong> (Always strain and rinse canned beans)<\/p>\n<p>3\/4 of a can each of <strong><em>black beans<\/em><\/strong> and <strong><em>kidney beans<\/em><\/strong> (I have no justification for this measurement other than I don\u00e2\u20ac\u2122t like them as much as garbanzo beans so I didn\u00e2\u20ac\u2122t put in the whole can. And lest you think I wasted food, they went into the turkey chili for dinner)<\/p>\n<p>1-1\u00c2\u00a0 1\/2\u00c2\u00a0 cups <strong><em>green beans<\/em><\/strong> chopped into pieces (Now I guess you could use a can of green beans. I, personally, do not like canned green beans, they aren\u00e2\u20ac\u2122t really green and are mushy, so I use fresh. Trader Joe\u00e2\u20ac\u2122s sells them in a bag, you throw it in the microwave for 4 minutes and voila!)<\/p>\n<p>1 <strong><em>red bell pepper<\/em><\/strong>, diced<\/p>\n<p>1\/2 of a <strong><em>red onion<\/em><\/strong>, diced<\/p>\n<p>1 1\/2 cups of <strong><em>cooked macaroni<\/em><\/strong> or other small pasta noodle (I used a whole grain, high protein version)<\/p>\n<p><strong><em>Fresh parsley<\/em><\/strong>, chopped<\/p>\n<p><strong><em>Fresh cilantro<\/em><\/strong>, chopped<\/p>\n<p>&nbsp;<\/p>\n<p>Dressing: (Again I am approximating the measurements, so feel free to play with it! )<\/p>\n<p>1\/3 cup <strong><em>olive oil<\/em><\/strong><\/p>\n<p>1\/3 cup\u00c2\u00a0<strong><em>white vinegar<\/em><\/strong><\/p>\n<p>Juice of one <strong><em>lemon<\/em><\/strong><\/p>\n<p>1 tsp <strong><em>sugar<\/em><\/strong><\/p>\n<p>1\/4 &#8211; 1\/3 cup <strong><em>deli-style mustard<\/em><\/strong><\/p>\n<p><strong><em>Salt<\/em><\/strong> and <strong><em>Pepper<\/em><\/strong> to taste<\/p>\n<p>Put the salad ingredients together in a large bowl, mix it up a bit so everything is distributed. Make the dressing separately in a smaller bowl, and whisk everything together (or throw it all in a mason jar and shake it up!). Pour the dressing onto the salad and mix until the dressing covers everything.<\/p>\n<p>I stored mine in a large mason jar and it lasted us all week!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>If you know me at all, you know that I travel via food.
